Tomato Sandwich



I bought two tomatoes at the University farmer's market today anticipating lunches of tomato sandwiches for the remainder of the week.  I am not sure whether I want to do just homemade bread + mayo+ tomato and leave it at that, or if I want to get fancy and add a bit of cheese too.

Suggestions?

What sort of cheese would you suggest? Mozzarella? Cheddar?

I believe Matthew is on the right track. Although on Monday I didnt have anything ready for lunch, so I just grabbed tomato, bread, mayo and cheese. I used the breakroom toaster to lightly toast my bread first.

I seriously wish it was tomorrow' lunch right now because I want one of these sandwiches immediately

I just used my cheap american cheese (fridge is getting empty, have to use what is available).

You know, I just ended up using bread + tomato + mayo and a bit of salt and pepper and it was a WONDERFUL sandwich.
